Oyster Tasting Notes: Huîtrerie Régis
A closer look at the three oysters I sampled on a quiet afternoon in Paris.
Last month, I finally made it to Huîtrerie Régis, the iconic little oyster bar in Paris’ Saint-Germain-des-Prés. You can read my full reflection on that visit here, but this post is for those of you who geek out on the behind-the-scenes oyster tasting notes and impressions.

The oyster selection at this 14-seater is as small and refined as its space. As far as I can tell, Huîtrerie Régis carries just a few oyster producers, but boasts an extensive selection of fine wines. I only had an hour to spare, so I opted for the small oyster platter: a dozen oysters (three varieties), four shrimp, and classic bread and butter for €49.
